Can the monitor be used on its own WiFi network? I don't use WiFi at home.

No: the device's own PylonMonitor-Setup network only serves the first setup. But no internet is needed: a small, inexpensive 2.4 GHz WiFi router with no internet connection is enough for the local dashboard, MQTT and Home Assistant.

I have a setup with eight Pylontech H48050 batteries. Would it be possible to use a wired Ethernet connection instead of WiFi?
Can the monitor be used on its own created WiFi network? I do not use WiFi at home, so it would be great if the WiFi network created by the monitor could be used not only to log in to another existing network, but also for full monitor access.

The Pylon-Monitor works over WiFi only: it has no Ethernet port, and its own network is only used for the initial setup, not for accessing the dashboard.
So it needs a 2.4 GHz WiFi network, but not necessarily internet: a small, inexpensive WiFi router is enough for the local dashboard, MQTT and Home Assistant. Internet is only needed for the online dashboard.
Your H48050 modules are supported through the SC0500 controller, connected to its CONSOLE port.
